Goji Berries

 

 

 

Grown in the pristine, fertile mountain valleys of Inner Mongolia, Goji is a fruit popular in Tibet, China and the Himalayas. This berry is said to have various beneficial properties, and those who include it in their diet on a daily basis are said to live a long and healthy life.

Goji berries are a fruit that is considered to be an herbal supplement because they contain most of necessary vitamins and nutrients to sustain a healthy life. Goji berries are a great quick snack that offers many health benefits. Measure an ounce of dried goji berries a day, then start monitoring yourself and notice the results. Three Recipes from “Raw & Beyond”

 

PURPLE SALAD
1/4 head red cabbage, thinly sliced
1 grated carrot
1 grated Fuji apple
4 stalks of celery, chopped
1 pint blueberries
1 avocado, mashed
Juice of 1 lemon
1 tablespoon flaxseed, ground
1 tablespoon dulse flakes
Combine all the ingredients except the dulse flakes and flax­seed in a large bowl. Sprinkle the dulse flakes and freshly ground flaxseed on top and serve.
SERVES 2

ROSEMARY RAIN SOUP
3 sprigs rosemary
2 stalks celery, chopped
1/2 bunch escarole
2 ripe tomatoes, cut in large pieces
1 cucumber, chopped
Juice of 3 limes
1 large avocado, peeled and seeded
3 cups water
1 tablespoon dulse flakes
Thoroughly blend all the ingredients except the dulse flakes together in a blender. Serve sprinkled with dulse flakes.
SERVES 4

VALYA’S SILLY-YUM SORBET
2 cups fresh orange juice
1 frozen banana
1 cup frozen strawberries
1 cup frozen cherries
4 tablespoons psyllium husk powder
Place all the ingredients in a high-speed blender. Using a tam­per, blend thoroughly on low or medium speed. It is not neces­sary to blend this sorbet on maximum speed. Also, using a low or medium speed will be easier on your blender. Have glasses ready to pour the sorbet into as soon as it is done blending, as the psyllium is a thickener and will quickly firm up.

Essene-Style Mediterranean Bread

 

ngredients (makes 6 little loaves)

  • 1 to 1 1/2 sprouted wheat, about 1/2 cup unsprouted
  • 3T – 1/4 c. extra-virgin olive oil
  • 1/8 t salt
  • 2 T chopped sundried tomatoes
  • 2 T chopped olives

Directions

  • Preheat the dehydrator to 135, while you prepare the batter.
  • In a food processor, blend all the ingredients except for the tomatoes and olives. When the wheat is well blended and broken down, and has the consistency and look of thick porridge, fold them in by hand.
  • On a non-stick dehydrator sheet, spoon the batter into 6 little mounds, no thicker than 1 1/2 inches. Each mound should be about 2 tablespoons.
  • Dehydrate at 135 degrees for 3 hours, then lower the temperature to 115 degrees and dehydrate for another 6 hours. If your loaves are flat, you might need less time, and if they are thicker, you will need a few more hours.
  • Flip them half way through, and when they are solid enough to be handled, transfer them to a mesh tray.

Creamy Curried Kale Salad

 

 

Ingredients :

  • 1 large avocado, ripe
  • 1 t – 1 T lemon juice
  • 1 T curry powder (I used Simply Organic)
  • 1 bunch kale (about 4-6 ounces), de-ribbed and leaves coarsly chopped
  • 1/2 t salt (I used Herbamare)
  • 1 T olive oil
  • 5 large cherry tomatoes, quartered

 

Directions:

  1. In a small food processor, blend the avocado, lemon juice and curry powder until smooth. Taste and adjust if needed.
  2. In a large bowl, massage the kale with olive oil and salt until softer and darker in color.
  3. Toss the kale with the avocado blend, and fold in the tomatoes.

Arwen’s Elvish Bread of Love

 

 

Ingredients:

  • 1 – 1 1/2 c. sprouted wheat, about 1/2 cup unsprouted
  • 2 T agave nectar or raw honey
  • 2 T melted coconut oil
  • 1 t lucuma, plus more to sprinkle on the non-stick sheet (optional)
  • A little water, as needed
  • 2 T raisins, soaked in water for about 20 minutes

 

Directions

  • Blend all of the ingredients except for the raisins to a puree, about the consistency of thick porridge.
  • Stir in the raisins.
  • Sprinkle lucuma on a dehydrator tray, and form little mounds of blended wheat onto it, for a total of about 6 loaves, no higher than 1 1/2 inch.
  • Dehydrate at 135 degrees for 3 hours, then lower the temperature to 115 degrees and dehydrate for another 6 hours.
  • If your loaves are flat, you might need less time for drying, and if they are thicker, you will need a few more hours.
  • Flip them half way through, and when they are solid enough to be handled, transfer them to a mesh tray.
